The stew will look stunning and is easier to serve if it is tipped into a shallow bowl and topped with separately cooked carrots. Adding chopped parsley and a knob of butter gives it a fresh vivacity and luxurious creaminess, prompting one Dublin friend to claim that this is the best Irish stew that he has ever eaten
